Let's hear it for Brownies!!!! even better than the chocolate ones!





Cook n Craft Academy recently hosted Brownie GS Troop 21072 to whip up some delicious snacks along with some beautiful jewelry as they geared up to earn some badges!

These Brownies were adorable and a lot of fun...super smart ad eager to learn!  We really enjoyed having them!

We made three different snacks...

SWEET
SAVORY 
and ENERGETIC

Here are the recipes along with some photos of our fun evening....'


SWEET--APPLE HAND PIES

pie dough
2 cups flour (measure carefully, do not pack!)
1/2 cup unsalted butter (4 oz)
1 tbsp sugar
1 tsp salt
6 tbsp ice water

Place ingredients in a Cuisinart and pulse together til crumbly yet sticks together when pinched.  (you may not need as much water or you may a little more)  If you don't have a Cuisinart...use a pastry blender. 

place onto parchment paper, form a  disk and allow to chill (about 30 minutes)
For the apple filling:
2 tbsp butter, diced
2 or 3 green or red apples
1/4 tsp salt
1/4 cup white sugar
1 tablespoon flour
1 1/2 tsp cinnamon, or to taste

egg wash (1 egg beaten with 2 tsp cream)
granulated sugar as needed

Peel apples and dice them into 1/4 or 1/2 inch pieces.  Place them in a medium bowl.  Add butter, salt, white sugar, flour, cinnamon.  Stir together.

Roll out pastry dough--cut out a 5 ot 6 inch circle.  place a heaping apple pie filling in center.  Fold pie round  and crimp closed. place 3 slits in center for air to escape.  Add egg wash and some granulated sugar.  Place into preheated 350 degree oven for about 20 minutes or until apple hand pie begins turning golden brown. 


SAVORY--CHEDDAR CHEESE BALLS

CHEESE BALLS

1 PACKAGE CREAM CHEESE
1/2 CUP CHEDDAR CHEESE
PRETZEL STICKS
1/2 CUP PECANS FINELY CHOPPED


MIX CHEESES TOGETHER.  ROLL INTO BALLS THE SIZE OF AN ACORN.  ROLL INTO CHOPPED PECANS, PLACE PRETZEL STICK IN CENTER OF BALL.  SERVE CHILLED.

ENERGETIC--CHOCOLATE PEANUT BUTTER BANANA OAT CUPS

1 CUP QUICK COOKING OATS
1/4 CUP BUTTER
1/2 CUP DARK BROWN SUGAR (PACKED)
1 RIPE BANANA
1/2 CUP MELTED dark CHOCOLATE
1/2 CUP PEANUT BUTTER

In a medium saucepan  over medium heat, melt butter and then add brown sugar.  cook til starting to bubble.  add  to oats.  Place 2 tablespoons into  cupcake lined muffin tin.  Then melt the peanut butter in the microwave till liquid.  Set aside.  Slice banana into 8 slices.  place one slice on top of  oats.  Add 2 tablespoons over the banana and then 2 tablespoons of dark chocolate.  Place in Fridge to set. Approximately 20 minutes
