Homemade Ice Cream Cake to celebrate Becca's Birthday!!!

   


     My daughter Becca recently turned 12.  One of the traditions in our house is --if its your birthday you can decide what kind of cake you want for your birthday.  When my girls were younger we had lots of Dora the Explorer cakes, Princess Cakes, Butterfly Cakes...even a Barbie Dream House birthday cake which I made on the Food Network for my show Lighten Up.  (Recipe here:  https://www.foodnetwork.com/recipes/christinas-cinderellas-castle-cake-recipe-2013396 )
This year, my Becca wanted an ice cream cake but not just any ice cream cake...she wanted the ultimate ice cream cake..it needed to include her favorite flavors (cookie dough ice cream and cookies and cream ice cream).  She wanted Cookie crunch, butterscotch, and a layer of cake as well.  So I prepared it a day in advance since it really to freeze overnight to set well.  

I lined a baking dish 9 x 12 baking dish with plastic wrap.  I then started layering the ice cream cake with various ingredients.  The first layer in the cake was going to be the top layer since I would turn the cake upside down out of the pan and peel off the plastic wrap.  The first layer was her favorite flavor the cookie and cream ice cream.  I used the entire carton for her first layer.  The second layer was her oreo crunch, which was about 1 sleeve of oreos crushed.  the next layer was the cookie dough ice cream.  After that I added a layer of butterscotch topping.  After that I added her cake layer which was a homemade pound cake (store bought works too--if you're looking to cut corners--Sara Lee makes a great pound cake).  And finally as a bonus layer I added butterfinger ice cream.  I then let the cake freeze overnight.  The next day I unmolded the cake from the pan and placed it on a large cutting board.  I "frosted" it with whipped cream.  I wanted to sprinkle some butter finger shavings on top...but Becca wanted it just plain...so we kept it that way.  Happy Birthday Becca....that cake didn't last long!!!
