Taco Night! |
I am not sure but it seems like lately our dinner rotation is in a bit of a rut--that is if you call having chicken then steak then chicken then steak chicken then steak a rut. I wanted to change it up a bit...but lately that's been our pattern. My husband loves pork chops, but when I make them he's usually the only one who eats them. I think the kids have fallen in love with the chicken then steak nights. One of the things my kids love the most are tacos...but I usually make them with ground beef. So this go around I decided to use pork chops as my base. It didn't hurt that they were on sale this week either. I diced my pork chops and sauteed them in a touch of olive oil with some onions. I then bought a can of enchilada sauce which was on sale (something I dont' typically use, but I'm always up for something new when the price is right). I added some refried beans to the mix for some thickness as well as some red kidney beans and a bit of ketchup for sweetness to take on the heat. I also happened to have some fresh cilantro on hand (because I had just made some quacamole the day before and because a bunch of it was on sale for 69 cents)....so I chopped that and added that in the mix. Now here's where I took the liberty to get a little creative (and what the kids don't know won't hurt them)....I added....get this.....leftovers from the day before which consisted of broccoli, brussell sprouts and steak. It all simmered in the crockpot for 5 hours. The kids loved it and never knew the difference.
