Cauliflower Crust Pizza...yum!




Today was an awesome day....getting together with new found friends to make Cauliflower crust pizza...So much fun!!!see below for the recipe!






CAULIFLOWER CRUST PIZZA
1 medium head cauliflower, cut into florets

1/4 cup grated Parmesan

1 teaspoon Italian seasoning 

1/4 teaspoon kosher salt 

1 large egg 

2 cups freshly grated mozzarella

1/2 cup  Pizza Sauce, 

Favorite toppings
1.                  For the pizza: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
2.                  Pulse the cauliflower florets in a food processor to a fine snowy powder (you should have about 2 1/2 cups). Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes.  If you don't have a food processor use a box grater.   Transfer to a clean, dry cotton kitchen towel and allow to cool.
3.                  When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary. In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1 cup of the mozzarella until well combined. Transfer to the prepared baking sheet and press into a 10-inch round. Bake until golden, 10 to 15 minutes.
4.                  Remove the crust from the oven and top with the Pizza Sauce and remaining 1 cup mozzarella. Add any favorite toppings. Bake until the cheese is melted and bubbly, 10 minutes more.

APPLE UPSIDE DOWN CAKE






Most strikes of genius occur by accident....at least that's what happened to me when I craved making an pineapple upside down cake and couldn't find any delicious ripe pineapples.  So necessity being the mother of invention--had me thinking outside of the box and using apples!   I was not disappointed with the results.

here's the recipe!

  • 1/3 cup butter, melted
  • 1 cup packed brown sugar
  • 3 medium tart apples, peeled and sliced(
  • (I used Braeburn)
  • 1/2 cup chopped walnuts (optional)
  • CAKE:
  • 3 tablespoons butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup buttermilk
  • 3 tablespoons sour cream
  • 1 teaspoon apple brandy or rum, optional
  • Pour butter into an ungreased 9-in. round baking pan; sprinkle with 1/2 cup brown sugar. Arrange apples in a single layer over brown sugar; layer with walnuts and remaining brown sugar.
  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda, salt and cinnamon; add to the creamed mixture alternately with buttermilk and sour cream, beating well after each addition. Beat in brandy if desired.
  • Spoon batter over brown sugar layer. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a serving plate. Serve warm.

3 INGREDIENT COOKIES....YUMMY....EASY....DELISH!!!!





If you're looking for something delicious to do with the kids....or perhaps just looking for an easy sweet treat....you MUST try these 3 ingredient peanut butter cookies....yes we did say only 3 ingredients.....they are



PEANUT BUTTER
SUGAR
EGGS

You may have those in your pantry and fridge.

Here's the full recipe

Ingredients

for 25 cookies
  • 1 cup peanut butter
  • ½ cup sugar
  • 1 egg


Preparation

  1. Preheat oven to 350ºF (180ºC).
  2. In a large bowl, mix together the peanut butter, sugar, and egg.
  3. Scoop out a spoonful of dough and roll it into a ball. Place the cookie balls onto a nonstick baking sheet.
  4. For extra decoration and to make them cook more evenly, flatten the cookie balls by pressing a fork down on top of them, then press it down again at a 90º angle to make a criss-cross pattern.
  5. Bake for 8-10 minutes or until the bottom of the cookies are golden brown.
  6. Remove from baking sheet and cool.
  7. Enjoy!

Homemade Bread




Have you ever made homemade bread? Here's a delicious bread recipe that is also super easy.

INGREDIENTS:

2 cups water
2/3 cup sugar
1 packet yeast
1 1/2 tsp. salt
1/4 cup vegetable oil
5 1/2 to 6 cups all purpose flour

INSTRUCTIONS:

Heat 2 cups water to 110-115 degrees F.  If you don't have a thermometer try this tip. Heat up 1/2 cup water in a microwave safe bowl for one minute. This will boil the water. Then add tap water til you reach 2cups.




Add the sugar to the water you just heated and stir it



Add the yeast packet to the sugar water and let it set for 10 minutes.



 It will become foamy..


Mix the salt and oil into foamy yeast mixture




Pour yeast mixture into large bowl.  Slowly add one cup of flour at a time to the yeast mixture.



 You may not need all the flour.  It depends how wet the dough becomes .  You want a non sticky dough when you form a ball.

Knead the dough for 5 minutes. sprinkle your surface with flour.  If the dough gets sticky add more flour.

Spray a glass bowl with cooking spray



place the dough inside the bowl andcover with a cloth.

Let the dough rise for one hour.



After the dough has risen punch it in the middle and pull the dough from the sides of the bowl.



use a  dough cutter (pastry blender) and cut dough in half (use knife if you don't have one)

Place each half in a greased loaf pan.





Let loaves rise again for30 minutes

Then place in a pre-heated oven at 350 F degree oven for about 30 minutes or until thoughly cooked through.
